Ingredients:
- 1 cup gram flour (besan)
- 1 cup all-purpose flour (maida)
- ½ cup water
- ½ teaspoon cardamom powder
- 2 tablespoons milk
- 1 cup ghee (clarified butter)
- 1 cup sugar
- 2 tablespoons finely chopped almonds and pistachios (for garnish)
- 1 teaspoon lemon juice (to prevent crystallization)

Step-by-Step Instructions:
First Prepare the Sugar Syrup:
- Heat the pan, and add sugar and water.
- Cook on medium heat and make sure all the sure sugar melts in the water.
- Cook until the mixture of water and sugar reaches a one-string consistency as a sugar syrup.
- Once done, turn off the heat and keep it aside.
Roast the Gram Flour and Maida:
- Heat ghee in a heavy-bottomed pan.
- Once Ghee is melts, add Gram flour and all-purpose flour.
- Stir this mixture continuously on low flame and avoid burning.
- Roast for about 10-15 minutes until the mixture turns golden brown and releases its aroma.
Combine the Ingredients:
- Slowly pour the prepared sugar syrup into the roasted flour mixture.
- Stir continuously to avoid lumps.
- Add cardamom powder and mix well.
- Cook until the mixture turns mild solid mixture.
Shape and Set:
- Grease a tray or plate with ghee.
- Pour the hot mixture onto the tray and spread it evenly.
- Sprinkle chopped almonds and pistachios on top for garnish.
- Let it cool slightly, then cut into square or diamond-shaped pieces.
Final Touch:
- Allow the Patisa to cool completely to set properly.
- Once set, store in an airtight container or serve immediately.
