Ingredients:

For the Broth:

  • 1 tablespoon oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch ginger, grated
  • 1 teaspoon salt (adjust to taste)
  • 1 teaspoon black pepper
  • 4 cups vegetable or chicken broth
  • 1 tablespoon vinegar
  • 1 tomato, finely chopped
  • 1 teaspoon soy sauce
  • 1 teaspoon red chili powder
  • ½ teaspoon turmeric powder

For the Noodles and Vegetables:

  • 200g noodles (wheat or rice noodles)
  • ½ cup cabbage, shredded
  • ½ cup carrots, julienned
  • ½ cup capsicum, sliced
  • ½ cup boiled chicken or tofu
  • 2 tablespoons chopped spring onions (for garnish)
  • 1 tablespoon fresh coriander (for garnish)

Step-by-Step Instructions:

Step 1: Prepare the Broth

  1. Heat oil in a large pan over medium heat.
  2. Add chopped onions, garlic, and ginger. Sauté until onions turn golden brown.
  3. Stir in tomatoes and cook until soft.
  4. Add soy sauce, red chili powder, turmeric powder, salt, and black pepper.
  5. Pour in the vegetable or chicken broth and bring to a boil.
  6. Reduce heat and let it simmer for 10 minutes.

Step 2: Cook the Noodles

  1. Boil water in a separate pot.
  2. Add the noodles and cook as per package instructions (usually 4-5 minutes).
  3. Drain and rinse under cold water to prevent sticking.

Step 3: Add Vegetables and Protein

  1. Add shredded cabbage, carrots, capsicum, and boiled chicken/tofu into the broth.
  2. Cook for 5-7 minutes until vegetables are slightly tender but still crunchy.
  3. Add vinegar and mix well.

Step 4: Assemble and Serve

  1. Place the cooked noodles in serving bowls.
  2. Pour the hot broth with vegetables and chicken/tofu over the noodles.
  3. Garnish with chopped spring onions and fresh coriander.
  4. Serve hot with chili sauce or extra soy sauce on the side.
