Chhangban – A Traditional Rice Cake from Tripura

Description

Tripura region streets are famous for selling the beloved traditional rice cake called Chhangban. The special rice which is sticky is used to prepare this soft and chewy delicacy. It is a perfect option with a tea as a snack, or served as a side dish in the meals or breakfast. The preparation is very simple and ingredients are also kept so simple thus makes this sweet so healthy and a natural treat.


Ingredients

  • 2 cups sticky rice (glutinous rice)
  • 1/2 cup jaggery (grated or in small pieces)
  • 1/4 teaspoon salt
  • 1 cup coconut (grated)
  • 1/2 cup water
  • 2 tablespoons sesame seeds (optional, for garnish)

Banana leaves (for steaming)


Instructions

Step 1: Soak the Sticky Rice

  1. Wash the sticky rice thoroughly under running water.
  2. Soak it in water for 3 to 4 hours. This helps in softening the rice for better texture.

Step 2: Prepare the Rice Mixture

  1. Drain the soaked rice and grind it coarsely using a traditional stone grinder or a mixer-grinder.
  2. In a pan, add jaggery and 1/2 cup water. Heat on low flame until the jaggery dissolves completely.
  3. Strain the jaggery syrup to remove any impurities and let it cool slightly.
  4. In a mixing bowl, combine the coarsely ground rice, jaggery syrup, grated coconut, and salt. Mix well to form a slightly sticky dough-like consistency.

Step 3: Prepare for Steaming

  1. Wash and cut banana leaves into rectangular pieces.
  2. Lightly heat the banana leaves over an open flame to make them pliable.
  3. Take a portion of the rice mixture and spread it evenly on a banana leaf.
  4. Fold the banana leaf to enclose the mixture securely.

Step 4: Steam the Chhangban

  1. Arrange the wrapped rice cakes in a steamer.
  2. Steam for 20 minutes on medium heat.
  3. Once cooked, remove the banana leaf wrappers carefully.

Step 5: Garnishing and Serving

  1. Sprinkle toasted sesame seeds on top for added flavor (optional).
  2. Serve warm with tea or enjoy as a standalone dish.

  • Traditional Chhangban is made without oil, making it a light and healthy snack.
  • The use of banana leaves adds an authentic aroma and enhances the taste.
  • You can adjust the jaggery according to your sweetness preference.
  • For a nuttier taste, you can add crushed peanuts or almonds.
