Ingredients:

  • ¾ cup water (as needed)

For the Filling:

  • 1 cup finely chopped cabbage
  • ½ cup grated carrots
  • ½ cup finely chopped onions
  • 1 tablespoon soy sauce
  • ½ teaspoon black pepper powder
  • 1 teaspoon salt (adjust to taste)
  • 1 tablespoon oil
  • 2 tablespoons chopped spring onions (for garnish)
  • ½ cup minced chicken/paneer/mushrooms (optional)
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated

For the Spicy Chutney:

  • 2 tomatoes, boiled and peeled
  • 2 cloves garlic
  • ½ teaspoon salt
  • ½ teaspoon sugar
  • 4-5 dried red chilies (soaked in warm water)
  • 1 teaspoon vinegar

Step-by-Step Instructions:

Step 1: Prepare the Dough

  1. In a large mixing bowl, combine all-purpose flour and salt.
  2. Gradually add water and knead until a smooth, firm dough is formed.
  3. Apply oil to the dough and cover it with a damp cloth.
  4. Let it rest for 20-30 minutes.

Step 2: Make the Filling

  1. Heat oil in a pan and sauté garlic and ginger until aromatic.
  2. Add onions and sauté until translucent.
  3. Mix in cabbage, carrots, and minced chicken/paneer/mushrooms.
  4. Stir in soy sauce, black pepper, and salt.
  5. Cook for 3-4 minutes until vegetables soften.
  6. Remove from heat and let the filling cool.

Step 3: Shape the Momos

  1. Divide the dough into small equal portions and roll them into thin circles (3-4 inches in diameter).
  2. Place a spoonful of filling in the center of each wrapper.
  3. Fold and pleat the edges to seal the momos properly.

Step 4: Steam the Momos

  1. Grease a steamer basket with oil.
  2. Place the momos inside without overcrowding.
  3. Steam for 12-15 minutes until the dough turns translucent.

Step 5: Prepare the Spicy Chutney

  1. Blend boiled tomatoes, soaked red chilies, garlic, salt, sugar, and vinegar into a smooth paste.
  2. Serve with hot momos.
